When my sister-in-law Laurie married into our family, we were delighted to pay homage to her great cooking skills by joyfully gobbling up everything she fixed. Then when her mother Carol moved from New York to live down the street from her daughter, we discovered where Laurie developed her interest and skill in cooking. Carol is now a part of all our family gatherings, and we never regret the calories we consume when Carol makes her peanut butter fudge or any of her other signature dishes!
Last year, Carol hosted our family Easter get-together and outdid herself with fun holiday decorations and her wonderful meal. She must have cooked for days in advance and obviously enjoyed the preparation as much as the party. One of the treats she offered as part of the dessert course (because there were quite a few choices) were these cute Easter chow mein noodle candy nests. They were too cute to resist!
There are many versions of this recipe, and I will offer two for you from which to choose, according to your tastes. The first version uses butterscotch, and the second uses peanut butter. You can easily involve your children or grandchildren in their creation.
- 1 6-ounce package chocolate chips
- 1 6-ounce package butterscotch chips
- 1 5-ounce can chow mein noodles
- 1 package of Cadbury mini-eggs or jelly beans to place in the nests
Melt the chips over low heat. Add the chow mein noodles to the melted chips, and drop the mixture by spoonfuls onto wax paper. Make a depression in the center of each mound of the mixture with a spoon, and add two or three of the candy eggs in the center of each.
Another option is to add coconut “grass” to the nest by tinting a small amount of coconut green with food coloring and placing a small amount in each candy nest. Add jelly beans to the nests.
- 1/4 cup butter
- 5 cups mini marshmallows (about half of a 16-ounce bag)
- 1/2 cup milk chocolate chips
- 1/4 cup creamy peanut butter
- 4 cups chow mein noodles
- 1 package of Cadbury mini-eggs, jelly beans, M&M eggs, malted robin’s eggs
Melt the butter and marshmallows in a large, non-stick stock pot. Stir in the chocolate chips and peanut butter, until melted. Remove the mixture from heat. Fold in the chow mein noodles until everything is coated evenly.
Spoon eighteen to twenty-four mounds of the mixture or “nests” onto lightly greased wax paper or a silicone baking mat. You can also place the nests into greased muffin tins to have a more consistent size of nests. Dip your fingers into cold water as you work to prevent the mixture from sticking, and shape each mound into a nest.
Immediately place three Cadbury mini-eggs in the center of each nest while each is still warm, so the eggs will adhere to the nests and not fall off.
Allow the nests to cool before consuming. Store the nests in an airtight container up to five days.
