With Father’s Day on the horizon, you may be planning a family get-together to celebrate this special man in your lives. Coming up with a menu that delights your father or husband is an important part of this planning.
My dad loves any occasion when the whole family gets together, especially if we are going to eat a meal! We always have appetizers when we have everyone gather–we are a large family so it takes a while for everyone to arrive–appetizers help pass the time for those waiting for everyone to arrive.
We usually have two appetizers–one is almost always a ring of shrimp, but the other is almost always different. The family foodies like to try out their new recipes on us, and we are all willing guinea pigs! Other family cooks make fantastic but more complicated appetizers; when it’s my turn, I am always in favor of tasty but easy recipes.
This recipe has been in my favorites file for many years. I was introduced to this appetizer recipe, I knew it was a keeper. During my first year of teaching, I tasted this appetizer at a party given by one of my teacher co-workers. I asked for the recipe because it was so good, and this friend shared it with me. The corned beef made it different than many other recipes and it was not expensive to make, which mattered to me then on my first-year teacher’s salary. But over the years, it has remained one of my favorites to take to parties.
So, on Father’s Day, this will be the recipe I will make–we’ll all enjoy, especially Dad!
1 12-oz. can corned beef
1 Tbs. prepared horseradish
1 Tbs. Dijon-style mustard
1/4 cup sweet pickle relish
1/4 cup mayonnaise
In a medium-sized mixing bowl, mash the corned beef. Add the horseradish, mustard and pickle relish. Stir in the mayonnaise to make the dip of spreading consistency. Serve this dip with assorted crackers or scooper chips. This recipe makes about two cups.
